•115g butter (plus extra for greasing)
•450g plain flour (plus extra for dusting)
•2tsp ground ginger
•1tsp ground mixed spice
•2tsp bicarbonate of soda
•100g golden syrup
•115g ligh muscovado sugar
•1 egg lightly beaten
I used an electric fan oven and preheated it to 150oc, but for other ovens you need Gas Mark 3 or 325of. You also need to grease your baking trays.
Fist in a large bowl sift together the flour, ground ginger, ground mixed spice and bicarbonate of soda. Then set it to one side.
Then in a small bowl I beat the egg then set it aside.
In a small saucepan place the butter, golden syrup and muscovado sugar. You will need to mix this on a low heat.
Once melted, pour over the dry ingredients and then add the beaten egg. Mix all the ingredients together to form a dough.
Then wrap it up in cling film, this is so it cools down and becomes less sticky. I left it in the fridge while I did the washing up and got ready for the next step.
Next dust a clean, dry surface with flour and roll out the dough. It says it should be about 3mm thick before you use those cookie cutters. Personally I just rolled it out until I was happy with it!
Then using your chosen cookie cutters to cut out your shape and place them on the greased baking sheet. Then re roll the dough and repeat until you have run out of dough. I left mine in the oven for 7-10 minutes but for the other ovens try 15-20 minutes.
Once cooked allow to cool. Then I placed them on a plate.
I used two different types of writing icing One normal and the other was chocolate and caramel. Then I also used chocolate and fudge chunks to decorate.
This is when you get to be creative and decorate all your little creations in any way you like.
